Kimchi Pork Belly Pizza

Korean style pizza

First I wanted to thank those of you who responded to my survey already. I’ll leave it open for a few more days so if you haven’t already, please take a minute to leave your thoughts. The feedback (particularly the written feedback) really helps make this a better site for everyone.

Based on a few of the comments from the survey and a quick look at my posts over the past few weeks I’m realizing that I may be leaning a bit too heavily on Asian influences, so starting next week I’m planning to shift the focus back towards the west. But first, here’s a pizza that sits somewhere in between (not unlike me).

Pizza ready to go into the oven

I know there are some pizza purists out there rolling their eyes and crying foul, so for you, just think of this as kimchi pork bread. The combination of the sweet spicy sauce with the slightly tart pickled cabbage tastes great on the thin crisp crust. Although the crispy pork belly does add a little something, if you’re vegetarian, feel free to leave it out, the kimchi and gochujang have more than enough flavour on their own.

for sauce
1 Tbs gochujang
kimchi juice
1/2 tsp sesame oil
1 clove garlic crushed

for pizza
1 lb of dough (the one in this book is perfect)
flour
cornmeal
1/2 C kimchi squeezed of excess juice and chopped
4 very thin slices of pork belly cut into squares
1 scallion sliced thin on the bias

Put the oven rack in the upper middle position, put a pizza stone (or baking sheet) on it and preheat to 475 degrees F.

To make the sauce, just mix the gochujang with enough kimchi juice so it’s thin enough to easily spread (but not watery). Add the sesame oil and garlic and stir to combine.

On a well floured surface, roll the dough out until it is less than 1/4″ thick. Dust a pizza peel (or wooden cutting board) with course ground cornmeal and lay the dough on top. Use a spoon to spread the sauce on the dough. Top with chopped kimchi and sliced pork belly.

Gently transfer the pizza to the preheated pizza stone and bake until the crust is golden brown. Remove from oven, sprinkle with scallions, slice and enjoy!

    Marc, you you’re so creative with flavours. This is gorgeous. I have to say I think you’re site is perfect as is. I don’t mind the Asian influence. I actually think you’ve got a good balance. Your posts are always informative and interesting and your recipes and photos are always outstanding.

    Thanks for the vote of confidence, I’ll still be posting Asian stuff, but I think after my Asia trip I’ve been getting stuck into a bit of a rut and it’ll be nice to change it up a bit.

    Oh my gawd, kimchee pizza? I wish I had thought of this, myself. I make my own pizza regularly, so next time I do, I am definitely putting some fermented, spicy cabbage on top. This is total California pizza.

    Oh Marc, Aren’t you handsome….what a cute smile. I wouldn’t have even noticed your picture however if you hadn’t told me about it because I would have been too busy droooooling over this yummy looking pizza. I was having an intense craving for pizza today. I fought it because I would have just succumbed to Dominoes! It is pictures like this that help me fight a craving for sub-standard pizza. Thank you!     Wow!!!

    First of all, I LOVE Pizza!!! I think I can eat pizza everyday for the rest of my life :)

    Second, I’ve been craving for Korean food… but haven’t gotten any chance yet.

    So, I guess, I’m drooling in here, hehehe…

    I don’t think I’ve ever had baked kimchi before. I have no idea how this will taste but I’ll keep it in mind when I’m feeling a bit more adventurous. :)

    We too use the same dough recipe, it comes out perfect every time.

    Friday night are usually homemade pizza night. I will have to add this one to our recipe box.

    I heard of Kimchi Pizza several years ago and thought “Yes! I must try it!” but haven’t seen a recipe…never forgot it though. Now I can try it – I’m reallllly glad you posted this!! Thanks!

    hi, stumbled across your site off notcot.org. this looks really great. my friend did a kimchi/pork belly pizza as well but used gochujang as a base i believe. i’m sure you’ve heard about the Kogi Korean Taco Truck (www.kogibbq.com) that is currently the hype of LA. This could be happening soon too, nice posting.

    I see you used cheese. I went back and forth on that one and decided against it mainly because the only cheese I had on hand was Gruyere and I was on the fence about whether that would work or not.

    I’ve never heard of gochujang. I’ll have to check that out at the store the next time I go. Your pizza looks amazing! I just started making my own pizza dough, and it was a lot easier than I thought.

    Wow that looks like one yummy pizza! I saw a programe on the TV last week all about kimchi and I want to try it! Can’t get it anywhere round here though, sadly.

    Marc, when I first read your title I thought “WHAT”?…but I see that this works. I’d go so far as to top it with some sort of pulled/shredded pork, marinated to give it a Kalbi falvour. The sweet & sour would be awesome (don’t forget the heat).

    This looks incredible.I’ve just fired up the grill for bbq pizza and have been looking for recipes involving kimchee. It never occurred to me to put them together. I’m going to make this immediately, if not sooner.

    This gives me the urge to do and make some Kimchi Pork Belly today!! Sweet and spicy flavored is one of my favorite. And I am going vegetarian today so It is really a good point out of what I'm looking for =D.
