It wasn’t long ago that wrapping anything edible (and even some inedible things) in bacon was the style du jour. Like any fad, it eventually faded and we moved on, but there are still compelling reasons to wrap certain things in bacon. Salmon for instance, can dry out easily and can have a strong odor. Bacon not only helps keep it moist, it can also tame the salmon flavor it’s own applewood smokiness. Check out how I do my bacon wrapped salmon with a maple mustard glaze over at PBS this week.
