I'm not too sure as I usually drink it all in a day or two. I'd imagine it should keep for around a week.

I've never tried it with walnuts, but I don't think it will be creamy
like it is when you make it with cashews.

Actually there is no milk in cream or butter so if you're lactose intolerant you can have those.

They need to be unroasted (they should be a very pale creamy color).
Once they're roasted, they won't work properly. They should either be
labelled "raw" or "unroasted", they sell them at Wholefoods.

[...] I’m very passionate about the topic of staying nice and hydrated (along with well fed and well rested) during pregnancy. I included information about why it’s so important in this post, and some great recipes for agua frescas in this one. But my new found love horchata deserved a post all her own.I first experienced horchata during a childbirth education class when we ordered in Mexican food (my classes are always as casual as they are information filled) and the mama-to-be I was working with suggested it. I enjoyed it, but didn’t give it much thought until a few weeks later when I saw a beautiful glass carafe holding the creamy and ice cold beverage at the Carroll Gardens Street Fair on a particularly warm day. It was on this second tasting that I really found the magic in horchata. It is creamy, and homey, and refreshing all at the same time. Lightly sweet, with a dusting of cinnamon, it cooled me off and warmed me up all at the same time. I’ve been searching for recipes for how to make it at home and have found a couple to share. The first comes from the blog No Recipes, and includes cashews (where most of the recipes I’ve seen call for almonds–so I like the twist!). It is what you see in the pic above and looks delicious. from No Recipes [...]

Sure, just replace the rice and water with rice milk. I'd still blend it with the raw cashews though otherwise you won't get the same creaminess.
