Kabocha Pumpkin Pasta

With T-day only a few days away I thought I’d share one of my favorite ways to use up leftover turkey. It’s a quick pasta that tastes like it took a lot longer to make than it actually does. The browned butter caramelizes the shallots and kabocha and pairs nicely with the turkey.
