Kimchi Pork Belly Pizza

I know there are some pizza purists out there rolling their eyes and crying foul, so for you, just think of this as kimchi pork bread. The combination of the sweet spicy sauce with the slightly tart pickled cabbage tastes great on the thin crisp crust. Although the crispy pork belly does add a little something, if you’re vegetarian, feel free to leave it out, the kimchi and gochujang have more than enough flavour on their own.

for sauce
1 Tbs gochujang
kimchi juice
1/2 tsp sesame oil
1 clove garlic crushed

for pizza
1 lb of dough (the one in this book is perfect)
flour
cornmeal
1/2 C kimchi squeezed of excess juice and chopped
4 very thin slices of pork belly cut into squares
1 scallion sliced thin on the bias

Put the oven rack in the upper middle position, put a pizza stone (or baking sheet) on it and preheat to 475 degrees F.

To make the sauce, just mix the gochujang with enough kimchi juice so it’s thin enough to easily spread (but not watery). Add the sesame oil and garlic and stir to combine.

On a well floured surface, roll the dough out until it is less than 1/4″ thick. Dust a pizza peel (or wooden cutting board) with course ground cornmeal and lay the dough on top. Use a spoon to spread the sauce on the dough. Top with chopped kimchi and sliced pork belly.

Gently transfer the pizza to the preheated pizza stone and bake until the crust is golden brown. Remove from oven, sprinkle with scallions, slice and enjoy!

      Marc, you you’re so creative with flavours. This is gorgeous. I have to say I think you’re site is perfect as is. I don’t mind the Asian influence. I actually think you’ve got a good balance. Your posts are always informative and interesting and your recipes and photos are always outstanding.

        Thanks for the vote of confidence, I’ll still be posting Asian stuff, but I think after my Asia trip I’ve been getting stuck into a bit of a rut and it’ll be nice to change it up a bit.

      Oh my gawd, kimchee pizza? I wish I had thought of this, myself. I make my own pizza regularly, so next time I do, I am definitely putting some fermented, spicy cabbage on top. This is total California pizza.

I wouldn’t have even noticed your picture however if you hadn’t told me about it because I would have been too busy droooooling over this yummy looking pizza. I was having an intense craving for pizza today. I fought it because I would have just succumbed to Dominoes! It is pictures like this that help me fight a craving for sub-standard pizza. Thank you!         I see you used cheese. I went back and forth on that one and decided against it mainly because the only cheese I had on hand was Gruyere and I was on the fence about whether that would work or not.

      I’ve never heard of gochujang. I’ll have to check that out at the store the next time I go. Your pizza looks amazing! I just started making my own pizza dough, and it was a lot easier than I thought.
