Hmm, i will say yes and no. Sure, the flour is mainly a brick builder. Yet it can also lend an interesting texture to the pancake. The reason I brought this up is because I have tried some Korean pancake which is made with sticky rice flour and rice flour. And it came out very good - similar to the melting cheese on a pizza :)

I've always used regular all-purpose flour, but most instant
Okonomiyaki mixes use a mix of regular flour and corn starch. You
could probably use rice flour as well. The flour is really there as a
binding agent as Okonomiyaki is more about the stuff you put in it
than the pancake part.

By any chance you have Takoyaki recipe?? I am craving for them, but don't want to go cross town to get them in New York - there are few Japanese restaurants in New York serving Takoyaki, mostly in East Village. And those serving it, are no good...nothing close to what I have had in JP , not even in Taiwan or Hongkong :(

Thanks!!

Yumm! Thanks for sharing the recipes! I am going to throw a Japanese street food fair at my apartment and this will absolutely on the list :)

Have on specific question regarding the flour? Is it specific or can be any type of flour, such as gluten free, wheat, rice etc? Per my knowledge, different types flour creates different textures. I know most Korean and Chinese pancages are using rice flour or corn flour. But not so sure about Okonomiyaki.

Looking forward to more authentic recipes! We have many Japanese grocery stores in NYC. So many authentic ingredients are available:) Thank goodness.

Sure, just make some yakisoba (
http://norecipes.com/2009/03/26/spicy-yakisoba/) in a separate pan, then put
it under the okonomiyaki. If you want to get fancy, you could do 2 thinner
okonomiyaki and sandwich the yakisoba in between.

I've had hiroshima okonomiyaki, and I can't imagine it without the noodles. Any suggestions on how to integrate noodles into the recipe?

My boyfriend loves okonomiyaki (and he knows certain places he likes and others that aren't good enough) and I thought it'd be nice to try and make some at home. I tried out this recipe and he was absolutely blown away. Thank you so much!
