Blu-rays are better than VHS, smartphones are better than rotary phones and refridgerators are better than iceboxes. While there will always be a place for the classics amongst aficionados and nostalgists, cuisine much like technology marches on. This week over at PBS Food, I’ve updated Potage Parmentier by adding more flavor while eliminating the dairy and cholesterol in this classic French soup.
