Kumquat Marmalade

While they may look small and cute, kumquats look far better than they taste. But because they have thin edible skin that’s loaded with pectin and isn’t very bitter, they’re perfect for making a quick marmalade.     What can I say about Marmalade? Grew op on it. My dad made Oxford Marmalade–dark, thick cut sour seville oranges. Lots of cooking time. Wonderful flavors. When we moved to so CA he had lots of oranges avail, but still made it from seville. AS I grew up and started making my own, I made it from the abundance of citrus varieties. But never tried kumquat, though I like the fruit. Probably because they are so expensive. I usually have just a few a are when they come out as a treat. Boy, you are taking me down memory lane as I wander your site. Thank you.
