Peanut Butter Potato Salad

I love peanut butter. Not only is it full of energy boasting protein, it’s a versatile food that’s just as good straight out of the jar as it is incorporated into both savory and sweet dishes. That’s why my pantry is never without a few varieties of peanut butter. You already know that Peanut Butter & Co’s, peanut butter is wholesome and natural (the one I used for this salad only has 4 ingredients), but did you know that their founder Lee Zalben is committed to running a company that’s both environmentally and socially responsible?

With Memorial Day just around the corner, here’s a new spin on potato salad I did for Peanut Butter & Co. Loaded with crispy celery and red onions, sweet cranberries and crunchy peanut butter it’s creamy and has a surprise in every bite.     Swap peanut butter for almond butter and I might consider it. Though I did have an extraordinary peanut butter and espresso semifreddo last night that was surprisingly delicious.

      You could substitute some other dried fruit such as raisins or dried mango, or you could just leave them out altogether.
