Red Onion Jam

This onion jam is super versatile and delicious, which is why I always like to have a jar in the fridge. It makes for a delightful contrast to a spicy Indian curry, and is a delicious sweet condiment slathered onto a bacon cheese burger. It's also great to have on hand when you have last-minute guests stop by for a drink and you need some quick canapés. Just slice some cheese onto slices of bread and then top with the onion jam and put the crostini in the toaster oven to melt the cheese. Head over to PBS Food for the full recipe and post.
