Soba Salad

Summer’s upon us, and while the mornings remain cool here in Napa, the blazing summer sun heats the valley like a giant clay oven. It’s the kind of weather that discourages any serious cooking, which is why I like to rely on salads like this which can be made before my place gets too hot. With chilled soba noodles, avocado, cherry tomatoes, marinated tofu, and cilantro all tossed in a nutty sesame dressing, it makes for a delightful side, or a filling vegan main.     We lived in Tokyo for 4 years and we are missing our local soba joint. I’m going to have to stop moaning about it and just make this to scratch the itch! Great recipe as always – I’m forever getting lost in your similar recipes links.

    Hey Marc! I was hoping that maybe you could put up a recipe for gomae salad? Your blog is so good, everything I’ve tried is great! And everything else looks delicious!

      Goma-ae is is pretty simple, just boil veggies, squeeze out excess water, then put in a bowl with ground toasted sesame seeds, dashi, a bit of soy sauce (not enough to make it brown), salt and sugar and stir.
