Kale was once a vegetable relegated to being cooked until a swamp green mush to make it edible. Even then, it wasn’t something that most people ate by choice. But over the past few years kale’s managed to go from hated to haute. This week over at PBS I share my favorite way of preparing kale, along with tips on how to make it milder and more tender.
