I’ll be on NHK World again this Wednesday/Thursday. This time, I’m the guest chef on Delicious Japan: the show where we introduce tasty ingredients from all over Japan. The ingredient for this episode? Kanjime Spinach from Hokkaido. By growing the spinach in very cold conditions, the farmers there able to substantially increase the sugar content of the spinach while reducing the oxalic acid content. This makes for super sweet spinach that doesn’t have the astringent taste characteristic of spinach even when eaten raw.
