So here’s a crazy idea, what would happen if you took all the ingredients of pho and turned it into a cold salad? That’s what I was thinking when I dreamt up this refreshing noodle salad one hot and steamy afternoon. With cold rice noodles, poached beef, bean sprouts and herbs tossed with a hoisin and lime dressing it’s the perfect meal to cool off in summer.
