When I get an idea in my head I don’t like to give up too easily, even when it’s looking pretty impossible. Some call it stubbornness, but I like to think of it as persistence:-) Getting a vegan mayonnaise I was happy with took me about thirteen batches, but the result was a rich creamy full-flavored mayonnaise without any egg, dairy or sugar and with less oil. Having tasted dozens of spoonfuls of experimental mayonnaise and comparing it to the real thing, I have to say I’m done with it for a while, but once I overcome my temporary aversion, the jar of Best Foods and squeeze bottle of Kewpie is getting replaced with this healthier alternative.
