When I get an idea in my head I don’t like to give up too easily, even when it’s looking pretty impossible. Some call it stubbornness, but I like to think of it as persistence:-) Getting a vegan mayonnaise I was happy with took me about thirteen batches, but the result was a rich creamy full-flavored mayonnaise without any egg, dairy or sugar and with less oil. Having tasted dozens of spoonfuls of experimental mayonnaise and comparing it to the real thing, I have to say I’m done with it for a while, but once I overcome my temporary aversion, the jar of Best Foods and squeeze bottle of Kewpie is getting replaced with this healthier alternative. Head over to PBS Food for my full Vegan Mayonnaise post and recipe.
