When I hear the word “lasagna” my mind fills with images of a sumptuous pasta that comforts the soul with tender noodles and a robust sauce loaded with lip-smacking umami. Sadly, most veggie lasagnas fall woefully short of these expectations. Not this one. Filled with roasted vegetables, a balanced tomato sauce and a rich, cheesy bechamel sauce, it’s hard to believe this lasagna is not only gluten-free, it’s vegan as well.
