CHOCOLATE FILLLED MOCHI
Tender chocolate mochi balls fillled with melty dark chocolate ganache.
Add the chocolate, cream, and butter to a bowl and microwave at 600W for a minute and a half.
Mix the ganache until it's smooth. Cover and refrigerate until set (about 4 hours).
Whisk the mochi flour, sugar, and cocoa powder together and then whisk in the milk a little at a time until smooth.
CHOCOLATE MOCHI MIX
Microwave the mochi mixture at 600W for two and a half minutes and then whisk in butter, breaking up clumps.
Microwave the mochi mixture at 600W for another three and a half minutes and then knead the mochi with a spatula until smooth and elastic.
Shape the mochi in a parchment-lined pan, cool to room temperature, and then cut into 16 even pieces.
CHILL AND CUT
Flatten a piece of mochi between your fingers so it's about 2-inches in diameter.
Use a round spoon or melon baller to scoop a ball of ganache and stuff it into the mochi, pinching the seams to seal.
Roll the chocolate mochi in cocoa powder and then give it it's final shape.
DUST AND SHAPE
