With a triple dose of garlic, these umami-packed garlic noodles are easy and delicious.
- 70 grams garlic (~1 large head, finely minced) - 1/2 cup vegetable oil - 45 grams black garlic (~8 large cloves, peeled) - 1/3 cup soy sauce - 1 tablespoon nutritional yeast - 1 tablespoon toasted sesame oil - 1 teaspoon onion powder - 260 grams fresh noodles - Scallions (chopped for garnish) - Black pepper (for garnish)
Saute the 65 grams of the garlic in half of the oil over medium-low heat until light brown in color.
Let the garlic cool a bit and blend with the remaining oil, fresh garlic, black garlic, soy sauce, sesame oil, nutritional yeast and onion powder.
Boil the noodles according to the package directions. Transfer to a bowl, reserving the boiling liquid.
Add a few spoonfuls of garlic sauce to the noodles along with some of the boiling liquid.
Toss the noodles together with the sauce. Taste and add more sauce if necessary.
Plate the noodles and garnish with chopped scallions and freshly cracked black pepper.
