JAPANESE GINGER PORK

Marinating pork in ginger is a Japanese technique that renders it tender and juicy. This easy Shogayaki recipe is made with pork chops and a handful of pantry staples.

INGREDIENTS

- 400 grams pork rib chops (3/4-inch thick) - 30 grams ginger (peeled and grated) - 1/4 teaspoon salt - 2 tablespoons sake - 2 tablespoons soy sauce - 1 tablespoons honey - 1 tablespoon potato starch - 1 tablespoon vegetable oil - scallions (chopped, for garnish)

Rub the grated ginger and salt into all sides of the pork chops. Cover and refrigerate for at least 1 hour.

MARINATE PORK

Whisk the sake, soy sauce and honey together until combined.

MAKE GLAZE

When the pork is done marinating, use paper towels to wipe off the excess ginger and dry the surface of the pork. 

DRY PORK CHOPS

Give the pork a light dusting of potato starch on all sides.

DUST WITH STARCH

Pan-fry the pork chops with the oil over medium heat until browned on one side, flip and brown the other side (~2 minutes per side).

PAN FRY

Use a paper towel and tongs to wipe up the excess oil in the pan.

WIPE OUT OIL

Pour the sauce into the pan, turn up the heat and turn the Shogayaki over repeatedly in the sauce to glaze it.
