MISO BUTTER SALMON
Miso butter glazed salmon gently steamed on a bed of vegetables.
- 1/4 cup miso - 2.5 tablespoons unsalted butter - 1 tablespoon sugar - 1 tablespoon vegetable oil - 250 grams cabbage (chopped) - 100 grams onion (wedges) - 100 grams carrots (thinly sliced) - 100 grams enoki (trimmed) - 1/4 cup sake - 450 grams salmon filet - Black pepper (to taste) - 2 scallions (chopped)
Whisk the miso, butter and sugar together until smooth.
MAKE MISO BUTTER
Spread the miso butter in an even layer on the top surface of the salmon.
Stir-fry the cabbage, onions, carrots and enoki mushrooms with the vegetable oil until wilted.
Place the salmon onto the bed of vegetables.
Add the sake and cover the pan with a lid. Steam the salmon for 8-10 minutes.
When the salmon is cooked through, garnish with black pepper and scallions. Serve with rice.
