SMASHED CUCUMBER SALAD

With crunchy smashed cucumbers tossed with a nutty sesame dressing, this easy Asian salad is brimming with bold textures and zesty flavors.

INGREDIENTS

- 325 grams cucumber (3 Japanese cucumbers) - 1/4 teaspoon salt - 1 teaspoon sesame oil - 1 teaspoon soy sauce - 1 tablespoon toasted sesame seeds - chili flakes (optional, to taste)

Trim the ends off of the cucumbers and use a heavy object like a rolling pin to smash them. 

SMASH CUCUMBERS

Sprinkle the cucumbers with the salt and toss to coat evenly. Let them sweat for about 10 minutes. 

SALT CUCUMBERS

Squeeze the excess liquid out of the cucumbers and put them in a dry bowl. 

SQUEEZE CUCUMBERS

Season the cucumbers with the toasted sesame oil, soy sauce, toasted sesame seeds and chili flakes to taste.
