Chicken wings braised with Umeboshi
Add the chicken, ume, konbu and mirin to a pot and cover with a lid. Bring to a boil, lower heat and simmer for 20 minutes.
Taste the braising liquid and add soy soy sauce if necessary.
SEASON TO TASTE
Turn up the heat and reduce the braising liquid until it forms a thick glaze.
Glaze the wings with the reduced sauce.
