CRISPY TOFU BITES

Ultra-crisp on the outside and flavorful and juicy on the inside.

Put the tofu on a wire rack and drain excess liquid. 

DRAIN TOFU

Cut the tofu into cubes and salt on a few layers of paper towels.

Grate the ginger and squeeze pulp to extract ginger juice. Add the garlic, mirin, soy sauce and black pepper.

GRATE AND JUICE GINGER

Bring the sauce ingredients to a boil and cook for about 1 minute.

BOIL SAUCE

Pat the tofu dry with paper towels. 

PAT TOFU DRY

Fry the tofu at 180 C (360 F) for 5 minutes per side, or until golden brown.

FRY TOFU

Add the fried tofu straight to the sauce, sprinkle with sesame seeds and toss to coat. 

TOSS WITH SAUCE

Plate the crispy tofu and garnish with additional sesame seeds and scallions.
