GLAZED JAPANESE SWEET POTATO
Japanese sweet potatoes glazed in a crispy sesame candy coating.
Cut the sweet potatoes into chunks that are roughly the same size and thickenss.
CUT SWEET POTATOES
Soak the cut potatoes in cold water to remove excess starch and prevent oxidation.
SOAK IN WATER
Steam the sweet potatoes with 1/4 cup water for 5-6 minutes, or until most of the water has evaporated.
STEAM SWEET POTATOES
Remove the lid and burn off the remaining water, but be careful not to brown the potatoes.
BURN OFF WATER
Deep-fry the sweet potatoes in oil preheated to 340 degrees F (170 C) until golden brown.
DEEP FRY SWEET POTATOES
Add the sugar and rice syrup into the pan you steamed the sweet potato in and melt the sugar over medium heat.
PREPARE THE GLAZE
Add the browned sweet potatoes into the glaze and toss to coat with the syrup.
