Mentaiko Bread Spread

Made with mentaiko, or spicy cod roe, this delicious bread spread is perfect with crackers or crusty bread as an appetizer, but it can also be slathered onto sandwich bread before toasting to make for a savory snack.

Ingredients

  • 250 grams mascarpone
  • 180 grams mentaiko
  • 4 grams garlic (1 small clove grated)
  • ½ lemon  (juice and zest)
  • Chervil (for garnish)

Instructions

  • Put the 250 grams mascarpone in a bowl and then grate in the 4 grams garlic and the zest from about ¼ of the ½ lemon.

  • Squeeze the lemon juice in the mixture.

  • Use your fingers and chopsticks to press the 180 grams mentaiko from the skeins and into the bowl.
