Spicy Chicken Lettuce Cups

These crisp cups filled with spicy ground chicken (or tofu) make for a great party canape, or a filling high-protein meal. Because they’re so easy to make, they’re perfect for a quick work-night dinner that won’t have you waking up at 3am with hunger pangs. I seasoned the chicken with a spicy sweet mix of sriracha and hoisin sauce and soy sauce, but this would be just as good flavored with cumin seeds and garam masala or fish sauce and Thai basil.     Marc, I tried this recipe, but used hamburger meat instead of ground pork. The wraps were fantastic and so, so flavorful. This is way more fun, and feel good than making tacos. The fried shallots were the crowning glory of this dish – they really popped the flavor up several notches on each bite. One question though: Do you think one could cook a batch of the meat mixture and freeze it for later use? This is such a good meal to have on hand for a quick put together meal if all you had to do was thaw the prepared meat mixture and assemble a few of the other ingredients at the end of the day.

      Hi James, I’m glad to hear you enjoyed it. Freezing and thawing should work in theory, but you’ll want to fry the mixture until it’s very crumbly and fairly dry. If there’s too much moisture remaining in the meat, the meat will become watery when you thaw it. Also, you may want to reheat a little in the microwave, otherwise the solidified fat in the meat will give it a chalky/waxy texture.
